Moroccan Tagine with Beef and Prunes Recipe
This classic Moroccan Tagine Beef and Prunes is a rich, flavorful dish combining tender beef with the sweetness of prunes, all enhanced with fragrant spices.
Ingredients:
- 1 kg beef (cubed)
- 200g prunes
- 2 onions (sliced)
- 2 cloves garlic (minced)
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp Moroccan Preserved Butter (Moroccan Smen)
- 1/2 tsp saffron threads (optional)
- 1/4 cup olive oil
- 2 tbsp honey
- 1 tbsp sesame seeds (for garnish)
- 1 hard boiled egg (for garnish)
- Water or beef broth
Instructions:
1- Prepare the Tagine Base:Heat olive oil in a traditional Moroccan clay tagine or a heavy-bottomed pot. Add onions and garlic, sautéing until soft.
2- Brown the Beef:
Add the beef cubes, cooking until browned on all sides. Stir in cinnamon, ginger, turmeric, black pepper, Moroccan preserved butter and saffron.
3- Simmer the Tagine:
Add enough water or broth to cover the beef. Simmer on low heat for 1.5 to 2 hours, or until the beef is tender.
4- Add Prunes and Honey:
In the last 30 minutes, add the prunes and honey to the tagine. Allow them to soften and the sauce to thicken.
5- Garnish and Serve:
Garnish with sesame seeds and hard boiled egg. Serve with couscous or fresh Moroccan bread.
